Rocky Road Ice Cream


I'm trying to clean out my cookbook collection, but before I toss anything I want to share/archive a few recipes that I want to try... This recipe comes from "Jenny Craig's Simple Pleasures". I've never been on the Jenny Craig diet, but figure her recipes must be healthy-ish.

Sounds perfect for summer...
Rocky Road Ice Cream

1 (3.9 oz.) package chocolate instant pudding mix
2 T sugar
1 cup fat-free milk
1 (12 oz.) can evaporated skimmed milk
3/4 cup miniature marshmallows
1/2 cup semisweet chocolate mini-morsels
1/4 cup coarsely chopped unsalted dry roasted peanuts

  1. Combine pudding mix and sugar in a large bowl. Gradually add fat-free milk and evaporated milk, stirring with a wire whisk until smooth. Stir in marshmallows, chocolate morsels, and peanuts.
  2. Pour chocolate mixture into freezer can of a 2-quart hand-turned or electric freezer. Freeze according to manufacturer's instructions. Pack freezer with additional ice and rock salt, and let stand at least 1 hour before serving. Yield: 8 (1/2 cup) servings.

    Per Serving: 203 calories, 6.0 g protein, 6.2 g fat, 33.2 carb, 1 g fiber
I don't have an ice cream maker, but it'd be worth it. I have good memories of my parents spending the afternoon with friends and kids, grilling and chatting while the ice cream churned.

Side note... I can't imagine packing a random candy bar in my lunchbox now, but I definitely had that Rocky Road candy bar back in the day. And it was awesome. The thought sounds gross today though, so I'll keep it a Rocky Road memory.
