Derrick is a great cook. Many mornings he makes a serious (Egg Beaters) egg scramble. Today it's full of veggies with turkey sausage. He also fixes my cup of coffee better than I can. Just sweet enough. Yesterday he had the day off so he fixed a great dinner featuring one of our favorite tilapia dishes. If you're in a rut, here are a few of our (easy) favorites.
Tilapia -
We buy frozen, in bulk. Just thaw fillets day before or quickly in water, sprinkle with a tiny bit of olive oil or cooking spray, then your favorite seasoning, then Japanese Panko bread crumbs. Derrick loves the easy crumb touch. Bake according to package directions (approx. 350 degrees, 20 minutes or "until fish easily flakes")
Turkey burgers -
You can find "tubes" of 93/7 ground turkey meat at Wal-Mart at a great price. I love to mix the meat with a packet of taco seasoning before I cook them. I prefer spicy taco mix and sometimes I add just a touch of water to help it mix, you don't have to use the whole packet. Chopped onion or green peppers also mix in well, especially when I cook them in the skillet.
Broccoli -
You know it's good for you. It's another one of our bulk buys - fresh and frozen. It's so easy to steam quickly in the microwave (get a cheap plastic steamer). One easy way to serve it - just top steamed broccoli with a bit of dijon mustard! Easy, healthy side.
Favorite new find -
I love salmon. Yet another Sam's find: frozen blackened salmon fillets. They were easy to thaw and cook and the seasoning was wonderful. Derrick isn't a big fan of salmon, but he really liked the blackened flavor.
Fresh spinach -
Another green and healthy side (also in bulk!). Just spray your pan with Pam or evoo (not a reference to Rachel Ray), add a bit of chopped garlic if you'd like. In a minute or two, add plenty of fresh spinach and cook until it's wilted.

With the Tilapia, try using Italian dressing and sprinking Cavender's seasoning on it. It is best if grilled on aluminum foil.
