Derrick and I buy most of our groceries from Sam's. Once we figured out some pretty regular meals and I got used to a certain set of ingredients, it just made sense. The only thing we struggle to finish before it goes bad is fresh spinach, but having the bag around makes us eat more and I feel like it's a healthy "problem" to have. I typically just let it wilt in a hot pan with a bit of olive oil, but the recipe below mixes it up a bit. Yum!
1/2 lb. spinach (about 3.5-4 cups)
1/2 T evoo
1 T pine nuts
1 garlic clove, chopped
Heat oil over medium high heat, add pine nuts and toast until brown, about 3 minutes.
Add the garlic and cook another minute.
Add spinach and cook, tossing it in the pan just until all leaves are wilted. Salt & pepper to taste. Healthy, quicky, and yummy side dish.
