Lime-Jalapeno Chicken

I love jalapenos, I love grilling, and I love simple marinades that work. Rarely have I found a marinade that works so quickly (just over one hour) and really flavors the meat. I didn't need sauce or any additions to the chicken after we took it off the grill! It's not spicy at all so don't be afraid of the pepper. In fact, I'm going to add chopped peppers for more spice next time.

Lime-Jalapeño Chicken
Ingredients:
1/4 cup lime juice
2 T canola oil
1 T white vinegar
1 tsp ground cumin
1/4 tsp salt
1 jalapeño, sliced (I used ~1.5 T chopped jalapeño from a jar)
1 1/4 pounds boneless, skinless chicken breasts (I used 4 large frozen breasts, thawed)

1) Whisk lime juice, oil, vinegar, cumin and salt in a small bowl. Stir in jalapeño. Place chicken in a shallow baking dish and pour the marinade over it, turning to coat both sides. Cover and refrigerate for at least 1 hour, turning once, or overnight.

2) Preheat grill to high heat. Oil the grill rack. Grill the chicken until cooked through and no longer pink in the middle, 3 to 5 minutes per side. Let cool slightly; thinly slice crosswise. Serve warm or chilled.

i think the dijon-ginger glaze might just make anything better, including fish, meat, pop tarts, sushi, breakfast cereals, pizza, and anything else edible. so good. as is your blog...keep the recipes coming, jules.
