Another yummy recommendation from Christie... I made this the day after she found/sent it to me and it was a big hit on girls night. When I made it, I didn't make chips, I just cut sweet potatoes into fries and baked them at 400 degrees F until... I don't know. I just cook them until some are crisp, some are burned, all are shriveled and then we eat them. Depending on how thick you cut the fries, small-ish ones take about 30 minutes. I did use the spice mix from the chip recipe and it was awesome even on its own. I'll include my substitutions...
Blue Cheese and Chive Dip
1 cup sour cream (I used light)
1 cup mayonnaise (I used fat-free)
1 tsp fresh lemon juice
1 cup crumbled blue cheese
1 1/2 Tablespoons honey
1/2 bunch finely chopped chives, plush extra for garnish
Kosher salt and freshly ground black pepper (this ties it together, don't skip!)
Mix and serve with sweet potato fries or chips
Sweet Potato Chips dusted with Chili Powder
2 large sweet potatoes
2 tsp chili powder
1 tsp garlic powder
1/4 tsp cayenne powder
1/2 tsp ground cumin
1 tsp kosher salt
1/2 tsp ground black pepper
Vegetable oil (for deep-frying)
Peel sweet potatoes, discard skin. Using mandolin or veggie peeler, make long thin strips from top to bottom of potato. Place in a bowl of ice water and chill for 1 hour. Drain in a colander and lay out on paper towels and pat dry. (end - I'm assuming if you know how to deep fry you can take it from here)
*by the way, I baked all the sweet potato fries first then tossed them in the seasoning mix.
