Pumpkin Raisin Bars & Pumpkin Delight

So... if you haven't had your pumpkin fix yet, here are two more recipes given to me by my office mate, Monte. I made both today and will share the Pumpkin Delight with Derrick's family for Thanksmas! Of course I've tasted both and they're worthy of the holiday. But I am pumpkin-biased so try it for yourself.

Pumpkin Raisin Bars
A yummy on-the-go breakfast or snack cake

2 medium eggs

1 1/2 cups Bran flakes

2 tsp baking powder

½ cup flour

1 tsp pumpkin spice

¼ butter or margarine, melted

½ cup firmly packed brown sugar

½ cup canned pumpkin

½ raisins or chopped dates

Beat eggs in small bowl. Stir in bran flakes, let stand 5 minutes.

Mix flour, baking powder and pumpkin spice in another small bowl.

Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in cereal mixture and pumpkin. Stir in flour mixture and raisins until well blended. Spread batter in grease and floured (or PAM) 9” square baking dish.

Bake at 350 for 25 to 30 minutes. Cut into 12 pieces.


Pumpkin Delight
Moist, yummy dessert - don't forget the Cool-Whip!

1 – can of pumpkin (15 or 16 ounce)

3 – 4 eggs

1 ¼ cups sugar

1 – 12 ounce can evaporated milk

1 ½ teaspoon cinnamon

1 ½ teaspoon nutmeg

1 box yellow cake mix

1 cup melted butter

1 cup chopped pecans

Preheat oven to 350 degrees.

Mix first 6 ingredients well and pour into well greased 13 x 9 baking dish.

Sprinkle dry cake mix over liquid mixture.

Drizzle melted butter over cake mix.

Top with chopped pecans.

Bake for one hour or until done. Test with toothpick. Cool.

Serve with whipped cream or French Vanilla ice cream.
