I'm in Kentucky with Derrick's family. It's officially Thanksmas Eve. Today, Derrick and I went with his mom and Phil to Red River Gorge. We walked on a natural bridge called Sky Bridge, took pictures on the porch of a restored 1900's cabin, and drove through a one-way rock tunnel. It was a great day to be outdoors and we just missed the rain.
Tonight, Derrick's mom taught me how to make and can jelly! We made pepper jelly and now I have high hopes of making my own sugar-free strawberry jam by the jar. That may be a bit ambitious for my second attempt, but it's a rewarding, fun task and there's plenty to share when you're done. We'll find out how the pepper version turned out in the morning.
I also made a quick snack treat for tomorrow's festivities. MY mom taught me this trick.
Rolos Pretzel Snack
Ingredients: snack sized pretzels, Rolos candies, pecan halves
Pre-heat oven to 300 degrees.
Spread a handful of pretzels in a single layer on a cookie sheet lined with wax paper.
Top each pretzel with one unwrapped Rolos candy.
Put cookie sheet in the oven for about 4 minutes. You'll need to watch, the Rolos need to just be melting when you take them out of the oven. Once out, press a pecan half into each Rolos candy. They need to be soft enough that the pretzels don't break when you press. Let candies harden in the fridge and enjoy!
