Triple Berry Waffles

On Sunday mornings I have more time to make breakfast so instead of the usual eggs or oatmeal, I hope to start trying out new recipes each week. Today was pretty simple - waffles with berries. Derrick found a great frozen berry blend at Sam's so I've been using the fruit - blueberries, raspberries, blackberries - in everything from breakfast to smoothies to desserts. I just took a basic pancake recipe and varied it to what we like.

Triple Berry Waffles
Servings: 2 (3 waffles/person)
1 cup Bisquick Heart Smart mix
2/3 cup skim milk
1/3 cup fat-free plain yogurt (optional, if you take out just add a bit more milk)
1 egg
1 cup berries (fresh or frozen thawed and drained; berry mix, blueberries, or 3/4 cup banana)
Dash of cinnamon (~1 tsp)
2 T flax seed

Stir ingredients except berries until blended. Gently stir in fruit.
Pour onto center of hot greased waffle iron, close lid
Bake about 5 minutes or until steaming stops (or until auto timer ends)
Top with 1 tsp. powdered sugar, the mix isn't very sweet by itself
Top with a few walnuts or pecans if you have them and sugar free syrup
- This recipe is also good for pancakes, but I'd reduce the liquid by taking out the yogurt or a bit of the milk.
