2012

My first plan was to share a recipe from Dr. Kate Landis, an awesome sugar-free cheesecake. I put the recipe card out on the counter and then it fell under the refrigerator. And Derrick tried to help get it with a fly swatter. And now it's in the middle, underneath. And Derrick thought e-mailing Kate for the recipe was better than pulling out the refrigerator. So I gave up, it's onto plan B until I hear from Kate.
Megan and I are neighbors now on Walton Road, but we were once neighbors in our dorm, Gregson (2002). I introduced her to a great, low-sugar, light dessert that we can call... Graham Cracker cake. We made it in our dorm room and I'll share it with you now.

You need 1 stack of graham crackers (most boxes come with 3 stacks; choose plain or cinnamon)
1 large jar natural, sugar-free applesauce
1 package sugar-free, strawberry flavored gelatin
1 8oz. package light Cool Whip (cool Wwwhhhhip if you've seen the Family Guy episode)
- Mix gelatin flavoring into applesauce.
- Put one whole graham cracker on the middle of your dish.
- Spread a thin layer of the applesauce mixture on top, then top with a second cracker. Again, spread a thin layer of applesauce on top and repeat until you've used the grahams. Once you've completed the stack, cover the whole miniature "cake" with cool whip and place in the refrigerator, leave it for at least 2 hours.
The applesauce will soften the graham crackers and it becomes a small, multi-layered cake. Have fun, surprise your friends and have 2 pieces.
It's low-cal.
I made this cake with FOUR stacks to make a big graham cake for Megan's lingerie shower in 2002 (see above photo). Now it's 2007 and we're neighbors again, but so much has changed
I've updated the second photo accordingly. My hair's long and Megan's is short. We'll have a NEW neighbor, Baby Baureis, in a few short months (see arrow). And hopefully I'm a bit more fit since then (see muscle tone... wishful thinking). I wonder what the picture will look like five years from now?

hahahaha...this was my favorite post thus far. Seeing derrick dig for a recipe, thoughts of that awesome dessert, and the photo editing (muscles and arrow, priceless). It made my night.

This made my day...what awesome history we have...and how does 5 years fly by so quickly? I thought your editing was very thoughtful and accurate as well.
