My favorite skillet accessory can be seen in the picture. It's a cover that's made for the skillet's handle so you don't have to keep picking up a pot holder to handle the pan. Another treat from Bed, Bath & Beyond (don't forget your 20% coupon).
I love cooking chopped onion and peppers in the pan. I love browning sausage and preparing chili meat or hamburgers. I really love that you can sear meat ON the burner (3 minutes per side for a filet for example) THEN you can just pop the pan in the oven and continue cooking. Even cornbread works best in a skillet. It's all in one and it's easy to clean and it's easy to use and easy to store. In fact I think I need more iron skillets in different sizes.

I know it may seem odd, but we have favorite skillets, as in plural. I love to use my stainless steel deep-sided skillet for risotto or pork chops. I love to use my non-stick super big skillet to mix pasta sauces with pasts. I use my smaller non-stick skillet to saute small amounts of veggies. And I love to use my cast iron skillet to make Chicago style deep dish pizza.
And I totally agree about the handle-pot holder. I can't tell you how many times I have burned my hands grabbing a skillet that came out of the oven! We got ours at Williams Sonoma and I haven't burned myself since.
