Cupcakes

When I opened this blog, I put up a mini-survey about favorite cupcake flavors. I haven't mentioned it since, but once the votes were tallied, strawberry (to my surprise) was the winner. Funny, strawberry is a flavor I rarely think about like testing, and the one time I did bake strawberry cupcakes for Cindy's birthday, it wasn't my most impressive batch.
I had better luck yesterday with my first red velvet recipe. It was Christie's birthday so celebration cupcakes were in order. I found a recipe from the "Cake Doctor" for red velvet cupcakes with white chocolate peppermint cream cheese icing. Long name, great icing.

By the way, I tried the new Pillsbury reduced sugar chocolate cake mix and it turned out great. I also started with cream cheese icing instead of making it from scratch and added the peppermint extract and melted white chocolate.
