Onion Souffle

Well, obviously the biggest news I'll have for a while is the arrival of Meg & Joe's baby boy! If you haven't seen photos yet, they're in a slideshow to the left.

I haven't shared a recipe lately so I thought I'd share a fail-proof recipe from my friend Christie (hope she doesn't mind!). She's made this Onion Souffle on a few occasions and it's always been a huge hit. If you have a potluck or party coming up, I promise this is worth considering. Don't try to be creative and use fat-free or light cream cheese. You'll only be disappointed and it's worth the splurge!

Onion Souffle

3 - 8 oz packages of cream cheese
1/2 c. mayo
1 - 12 oz package frozen chopped onions
1/2 teaspoon garlic powder (you know I put more cuz I love it!)
2 c. parmesean cheese (grated)
Combine all ingredients.
Bake at 350 degrees for 15 minutes.
Serve as a dip with corn chips or a spread with crackers
